This is a visual tutorial on how to make kimchi using our Mama O's Premium Homemade Kimchi Kit.
Take the cabbage, chop it into kimchi size pieces. Brine overnight in salt water solution. This step is very important. You are setting up the overall flavor of your kimchi and also determining how fast it will ferment as well. Use the ratio we recommend.
Next day, wash the brined cabbage, mix with the paste, chop a little scallion, mince a little cilantro and mix it all up.
We open air ferment everything here, we don't airlocks but they are pretty cool...
Transfer kimchi to a vessel you will throw in the fridge.
